Banana Choc Chip Mini Muffins- G/F, D/F, RSF


Time poor? Stuck for ideas for lunch boxes? Want to make something healthy and actually tastes GOOD? These mini muffins are Gluten Free, Dairy Free, Healthy and taste AMAZING!

Great for kids and us adults too! With less than 5 mins to make and 8-10 mins to bake these are the fastest muffins you will ever create!

You don’t even need a bowl for this, just a good blender or a food processor will do just fine!

What You Need

  • 1x Banana
  • 1x Egg
  • 3 Tablespoons of Honey
  • 4 Tablespoons of smooth Peanut Butter
  • 1 teaspoon of Baking Soda
  • 1 teaspoon of Vanilla Essence
  • Dark chocolate drops or Cacao Nibs

How To

Preheat the oven to 180 degrees (°C) and spay your mini muffin tray with your choice of oil – I used coconut oil. Once you have done that, all you need to do is put all your ingredients into a powerful blender or food processor, MINUS the chocolate nibs. Whiz for 30-60 seconds or until smooth. Take a good handful of chocolate nibs and stir them into your mixture. Fill your mini muffin tin to 3/4 full and place in oven to 8-10 mins.

This mixture makes 18 mini muffins!
