No Bake Power Bars


These NO BAKE Power Bar beauties are packed full of the right kind of stuff!

They’re a healthy alternative to the school lunch box muesli bars – protein energy bars that are not filled with sugar, fillers or nasty numbers AND they are a reasonable price to make.

My beautiful soul sister Casey made these up herself after coming back from London where healthy food options were in abundance. She was finding it hard to select something that was packed full of protein to keep her full, tasted good, satisfied that sweet tooth, and didn’t cost the earth. She also wanted something that was generally healthy and had good old fashion “clean” ingredients, but to her surprise the local supermarkets didn’t have anything that tickled her fancy. So, what better way than to be a kiwi and DIY!

All ingredients are very roughly measured! Basically chuck in what you will, which is my type of baking!

You will need:


  • 2 Cups of oats
  • 3 Table spoons of  peanut butter
  • 3 Table spoons of rice malt syrup
  • 1 Cup of Flaxseed meal
  • A splash of water
  • 1/2 cup of all different kinds of nuts (your choice) – For example, Walnuts, Brazil nuts, Almonds, Sesame seeds etc.
  • 1/2 cup of chopped up apricots
  • A hand full of Cacao nibs
  • Melted dark chocolate to drizzle over


How to:

Throw into a bowl all together, get your hands messy and mix it all up! Line a baking tin with baking paper. Pop your mixture in and press down. Drizzle your melted dark chocolate over top, and pop into the freezer to set. Once chilled and set, you can serve.

The freezer should not make it frozen, but it keeps it hard which is much easier to eat!
