RAW Carmel Slice- D/F, G/F, RSF


The most beautiful, scrumptious, rich vegan caramel slice you have ever feasted your eyes on! It doesn’t look very pretty but trust me, it makes up for it in taste! 

Though it is still a treat, it is a much healthier alternative to our sugar loaded friend – the classic wicked caramel slice.

This RAW vegan caramel slice is not only loaded with healthy fats such as walnuts, but its creamy caramel mixture is full of vitamins and minerals, such as vitamin A, iron, B vitamins, manganese and folate, as well as protein and antioxidants – just to name a few!

Trickery at its finest.

This slice is Gluten and Dairy free.

 

What you will need

BROWNIE BASE

  • 2 cups walnuts
  • 1/2 cups pitted dates
  • 1/3 cup cacao powder
  • 2 Tablespoons of  coconut sugar
  • 1 cap of vanilla extract
  • Pinch of Pink Himalayan salt

Blend the walnuts in a food processor or blender until they are fine in texture.

Add all other ingredients with your walnuts, and blend into more of a sticky consistency.

Line your chosen dish with baking paper and spoon the mixture into the dish. Press down with the back of a spoon to make your base. The smaller the dish the thicker the base, I prefer a thicker base!

Pop into freezer for an hour to chill.

 

The Caramel Goods!

  • 1 cup macadamias
  • 1 cup pitted dates
  • 1/2 cup pure maple syrup
  • 2 caps of vanilla extract

Pop the macadamias into your processor or blender on high until they are fine in texture.

Add all other ingredients until smooth to make a more creamy texture.

Spoon the mixture evenly on top of the brownie base and press with the back of a spoon.

Pop in the fridge and chill until your chocolate topping is ready.

 

Chocolate topping

  • 1/3 cup coconut oil – melted
  • 1/2 cup cacao powder
  • 2 tbs pure maple syrup

  • 1/3 cup coconut oil – melted
  • 1/2 cup cacao powder
  • 2 tbs pure maple syrup

 

Heat your pot on a low heat, and add your ingredients until they melt and combine. Pour them evenly on top of the caramel layer.

Place the dish in the freezer for about 2 hours or until it sets. Then cut into squares!

Store in an airtight container in either the fridge or freezer.

I personally love mine in the freezer, where it’s not so handy! It will never set too hard but will have more of a chewy texture. YUM!
